Tabit Chef Terminology
Below are some key terms and indicators that are used within Tabit Chef:
Guest: Comprised of only Seated Orders that have a greater than $0 Bill, and were open for more than 10 minutes but less than 6 hours
Per Person Average (PPA): The number of Net Sales divided by Guests per Seated Order
4-Week Average: Compares the previous four weeks of data and creates an average
Net Sales: Item Sales - excludes taxes, tips, fees, and service charges
Voids: Items that were canceled and not reduced from the inventory
Operation: Returned Items or Orders, any applied Exception in the Operational bucket
Comps: Applied Exceptions in the Marketing and Retention bucket and any Auto Promotions
Employee: Applied Exceptions in the Organizational bucket
Order Type: Seated Orders (through the Server/Bartender Workflow Profile or OTC Workflow Profile), Takeaway Orders (through the OTC or TD Workflow Profile), Delivery (through the TD Workflow Profile)
Table Owner: By default, defined by who is logged in when the first Item is ordered to a seat. Can be managed on the Order Level or by parameter
Labor %: Net Sales divided by Labor Cost
Colors: Based on the 4-Week Average, the percentages are indicated as follows:
Dark Red - less than 80%
Bright Red - between 80-90%
Yellow - 90-100%
Light Green - 100-110%
Dark Green - over 110%
